Pepper Chicken Semi-Gravy recipe
Ingredients:
- For Cooking:
- 500g chicken (bone-in or boneless, cut into medium pieces)
- 2 tablespoons oil
- 1 teaspoon jeera (cumin seeds)
- 2 green cardamoms
- 1 star anise
- 1 small piece cinnamon stick
- 2 cloves
- 1 bay leaf
- 3 onions, finely chopped
- 2 teaspoons ginger-garlic paste
- 1 tomato, finely chopped
- 1 teaspoon chili powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 1½ teaspoons jeera powder (cumin powder)
- ½ teaspoon turmeric powder
- Salt, to taste
- Freshly ground pepper powder (as needed, for garnish)
- Fresh coriander leaves, chopped (for garnish)
Instructions:
Heat the Pan:
Heat a pan with 2 tablespoons of oil. Add jeera (cumin seeds), cardamom, star anise, cinnamon, cloves, and bay leaf. Sauté for a few seconds until aromatic.Sauté the Onions:
Add the 3 finely chopped onions to the pan and fry them until translucent and slightly golden.Ginger-Garlic Paste:
Add 2 teaspoons of ginger-garlic paste and mix well. Cover the pan and let it cook for 1 minute until the raw smell disappears.Add Tomatoes:
Add the finely chopped tomato and sauté until it softens and blends well with the onions.Add Chicken & Spices:
Add the chicken pieces, salt, a pinch of turmeric, 1 teaspoon chili powder, 1 teaspoon coriander powder, 1½ teaspoons jeera powder, and ½ teaspoon garam masala. Mix everything well so that the chicken is evenly coated with the spices.Add Water:
Pour in enough water to just cover the chicken. Bring it to a boil, then reduce the heat to medium-low. Cover the pan and let it simmer for about 20 minutes, or until the chicken is fully cooked and the gravy reduces to a semi-thick consistency.Finish with Pepper:
Once the chicken is cooked and the water has reduced to a semi-gravy consistency, switch off the stove. Sprinkle freshly ground pepper powder generously on top.Garnish:
Garnish with fresh coriander leaves and serve hot.
