Mutton/Lamb liver fry or Eeral Chukka

This is my mom’s Tirunelveli style eeral chukka. she gave me few recipes to try with liver/eeral. This is one dry roast / chukka recipe among them. I found this as an easiest version and yummiest too. 


Ingredients:
1. Oil - 5 to 8 spoons
2. Saunf - 1 spoon
3. All spices - Cinnamon/ Pattai, Cardamom/ Elachi, Star anise, Briyani leaf, Cloves/Kirambu/ lavang
4. Ginger garlic paste - 2 tablespoons 
5. Liver / eeral - 250 gms
6. Shallots - 1 cup (or) Onions - 2
7. Tomato - 1/2 
8. Salt
9. Turmeric - 1/4 tablespoon
10. Jeera powder - 1 tablespoon
11. Pepper powder - 2 tablespoons
12. Coriander powder - 1/2 tablespoon
13. Coriander for garnishing

Preparation method:

1. Heat 5 tablespoons of oil in a pan/ kadai, add saunf and add in the spices given in point 2.

2. Add in the ginger garlic paste and mix well in medium flame. 

3. Add in the finely chopped onions and mix well until it turns to transparent.

4. Now add in the finely chopped tomatoes and mix well until it is smashed completely.

5. Now add in the chopped liver / eeral, salt and turmeric to the pan and mix it well for 3 mins in medium flame. 

6. Add 1 glass of water to the pan and close it with lid. Keep it in medium flame and cook it well for 10-12 mins.

7. Once the water is reduced almost, add the jeera powder, pepper powder, coriander powder to the liver and mix them well in low flame.

8. Now it will be in chukka / dry roast consistency. Add in 2 tablespoons of oil again and mix it well. Switch off and garnish with coriander leaves. 

Gingelly oil can be used. Pepper can be added more according to your spice need. 

This can be served with Briyani, Non-veg meals, Rasam rice, ghee rice etc.

This can be served as a starter as well.
