Easy Mushroom Masala / Mushroom sabzi

Ingredients:

1. Button Mushrooms - 1 cup
2. Onion - 2 small
3. Tomato - 4 small
4. Ginger garlic paste - 1 tablespoon
5. Saunf / Fennel Seeds - 1 tablespoon
6. Elachi / Cardamom - 3
7. Oil - 4 tablespoons
8. Chilli Powder - 1 tablespoon
9. Jeera Powder - 1 1/2 tablespoon 
10. Turmeric Powder - 1/4 tablespoon
11. Garam masala - Small Pinch (Optional)
12. Salt - Required amount


Preparation method:


1. Chop the onion and tomatoes to small thin pieces.

2. Heat oil in the Kadai and add in the saunf, elachi to it. I used gingelly oil (Optional)



3. Add in the ginger garlic paste and mix it well.



4. Now add in the chopped onions, turmeric, and salt. mix them well until onion becomes tender.



5. Add the chopped tomatoes, turmeric powder, and salt. mix them well and leave it.



6. Once the onion-tomato masala leaves the oil on the side, add red chili powder and jeera powder to it and mix them well.



7. Add in the chopped mushrooms to the masala, mix it and let it sit in medium flame for 2 minutes.



8. Now add 1 glass of water to the Kadai and let it boil in high flame for around 10 to 15 mins.



9. Mushroom masala will be thick by this time and reduced to a semi gravy consistency. Add in a pinch of garam masala.



10. Garnish with coriander.

Note: Coconut Milk or cashew paste can be added to the masala at the end. It is purely optional.
