Coconut Laddu / Fudgy Coconut Balls
Ingredients:
1. Desiccated Coconut / Flaked Coconut / Shredded Coconut / Thengai Thuruval - 2 Cups
2. Milk - 1 Cup
3. Brown Sugar / Nattu Sakkarai or Sugar - 1 Cup
4. Clarified Butter / Ghee - 6 tablespoon
5. Cardamom / Elachi - 4 to 5 pieces
Note: Desiccated Coconut - 3 tablespoon (For Rolling the laddus at the last)
Preparation method:
1. Heat the clarified butter/ ghee in a frying pan or Kadai.
2. Add Cardamom / Elachi to the clarified butter /ghee and mix it well.
3. Now in low flame, add in the desiccated coconut / Thengai thuruval to the Kadai and mix it for a minute.
4. Now add the sugar and mix it with desiccated coconut in low flame.
5. Pour the milk into Kadai and mix it well.
6. leave the coconut mixture to be boiled in medium flame for about 10 minutes, stirring occasionally.
7. Once it comes to a solid consistency, switch off the flame and allow it to cool.
8. Once it is cooled completely, Form laddu with hands and roll them in desiccated coconut.
Note: This can be stored up to 15 days. Healthy snacks for kids and an easy dessert to make on a stringent timeline.
