Lemon Rice / Elumichai sadam
Ingredients:
1. Rice - 1 cup2. Lemon - 1 medium
3. Salt - Required
For Tempering:
1. Oil - 2 tablespoons2. Mustard Seeds / Kadugu - 1/2 tablespoon
3. Bengal Gram / Kadalai Parupu - 1/2 tablespoon
4. Peanuts / Verkadalai - 1 tablespoon (Optional)
5. Cashew Nuts / Mundiri - 1 tablespoon (Optional)
6. Curry Leaves
7. Green Chilli - 2
8. Turmeric Powder - 1/4 tablespoon
Preparation method:
1. Pressure cook 1 cup of rice with 2 cups of water for 3 whistles.
2. Once the rice is cooked, take it in a bowl and keep it aside.
3. In a pan add oil and heat in low flame, now add in the mustard /Kadugu, Bengal Gram / Kadalai Parupu, Peanuts / Verkadalai, Cashew Nuts / Mundiri, Curry Leaves, Green Chilli and Turmeric Powder. Fry them for 2 mins in low flame until they all turn slightly brown.
4. Now add the fried ingredients, salt and juice of 1 lime to the cooked rice and mix well.
5. Adjust salt as per your taste.
This is an easy lunch box recipe and its a basic dish in south indian recipes. It goes to the category of variety rice. This goes well with a different versions of potato fry called as urulaikilangu poriyal in tamil.
My mom at least make this once in a week, when i was going to school. I would always love to eat it with her special diamond potato fry.
