Brinjal Poriyal / Baingan Fry / Eggplant Roast

Ingredients:

1. Brinjal / Baingan / Egg plant - 500 grams
2. Oil - 4 tablespoons
3. Salt - Required
4. Mustard Seeds / Kadugu - 1/2 tablespoon (optional)
5. Curry Leaves (Optional)
6. Turmeric Powder - 1/4 tablespoon
7. Red Chilli Powder - 2 tablespoon
8. Asafoetida - A pinch (Optional)


Preparation method:

1. Cut the brinjals into long and thin pieces.



2. In a pan add the oil and heat it. Once it got heated, add in the Mustard Seeds / Kadugu and let it splatter.

3. Now add in the curry leaves and brinjals in to it and fry them for 2 mins.



4. Add the Turmeric Powder, Asafoetida and salt to the brinjals and mix them well.



5. Cook it in low to medium flame for 10 mins. 

6. Once they are partially cooked, add in the red chilli powder according to your spicy needs. toss it well.



7. Leave it in low flame for another 5 mins and switch it off.

I usually cook this using coconut oil, which gives an excellent flavour to it and also for keto.
